In this marinade the antioxidant rich fruit tenderizes and flavors the meat and helps create a finger licking coating we all love.
Ingredients:
1 cup fresh blackberries
1/4 cup coconut aminos (I love this soy sauce alternative)
1/4 cup unseasoned rice vinegar
1 Tbsp toasted sesame oil
2-4 stalks of scallions or chives, roughly chopped
2-4 cloves garlic, finely chopped
Instructions:
Blend all ingredients together, except the chops. I used an immersible blender.
Lay pork chops flat in a glass dish
Pour 1/2 marinade over chops, set aside the other half for after they are cooked
Flip and coat the bottom of the chops too
Allow to marinate for 4 hours
Preheat your oven to 400 degrees F
Bake for 14 minutes, uncovered
Remove from oven and let rest 5 minutes
Serve with reserved marinade drizzled over the top.
